Every part of the Amaranth are edible and nutritious.
I’m always amazed at how rarely one sees Amaranth seed available for consumption in food outlets.
It is easy to grow and because it bears no relationship to the grass family, it is easily used as food by a much wider range of people than ‘grain’.
This variety is particularly suited to raising as, ‘micro greens’ and is very easy to raise to any age.
It looks wonderful as a low back to most vegetable gardens as well.
The colour is retained even after some cooking.
