This heirloom variety has been very popular in Australia and New Zealand where the culture of fresh, sweet corn on the cob, has become part of our summer ritual.
This variety is a natural hybrid that still happens in large scale planting of maize, but is normally weeded out as it stores poorly for supply to the grain market.
Therefore, it must be eaten fresh, while it is still ‘milky’ and the sugars have not started to convert to starch.
