The South Americas have produced some of the most amazing root crops, and Yacon is certainly one of our favourites.
It is similar to Jerusalem Artichoke in growth habit and temperament but is well behaved in the garden, never becoming invasive.
The plants spend all summer growing a wonderrful crop of tuber which can stay in the ground until you need them during winter.
Best enjoyed raw, they have a very fruity taste and a crunchy texture.
While they enjoy frequent watering, they do not respond well to wet feet, so well draining soil is a must.
Active or dormant tuber/ depending on the season.
